Yet another busy day!

Today we finished up the Back to School cupcakes, pick up some fun party supplies for Koby's first birthday and headed over to school to start repainting the playground. Of the fifty states there are 7 left to paint, I will finish those up tomorrow. My nephew kindly helped me and decided that he no longer likes Alaska (since it is so BIG at least on the playground) I felt similar when it came to Texas...I think the original painter over extrapalated the size of those two states lol. Once I am done I figured that I would snap a few quick pics and post them up for all to see.

Now I am off to get the beasties into the bath, jammies on and send them off to bed. THEN it will be some MUCH needed quality quiet MOMMY TIME! Until tomorrow...

Koby's First Birthday!!

It is hard to believe that day is quickly approaching...he will be a WHOLE YEAR OLD soon...my baby has grown far to quickly. My friend makes the best cakes in the world and the Nightmare Before Christmas just so happens to be her favorite movie. She amazingly has never made a Nightmare Before Christmas cake and she said it is about time. Since Koby was born only a few days from Halloween (I actually think all the walking for trick-or-treat is what put me in labor lol) he is going to have a Nightmare Before Christmas Costume Birthday Party. I LOVE HALLOWEEN! Before my husband took his promotion we used to have yearly Halloween themed parties. I loved planning them all down to the little details. One year I even sent out bloody severed "fingers" in little boxes as the invitations. I won't get that gruesome with Koby's party (maybe when he is a teenager ;) I hope and wish that his dad could be here with us, but won't hold my breath. Maybe someday the economy will pick back up and we can be together as a family again.

Anyways...I have started to find all sorts of great ideas for decorations and party favors. I will be sure to take LOTS of pictures to post and so that daddy can see too! Stay tuned!!

Yesterday's Breakfast Freezer Day!

Since the boys didn't have school yesterday and all I had to do was pick up the paint to repaint the school playground I decided to try and get ahead by making a bunch of prepackaged healthy breakfasts for the boys since I don't see our schedule slowing down anytime soon. I found a few recipes in the Disney Family Fun Magazine (I really recommend getting this if you have kids, it is packed full of great recipes, ideas and more!) I made 18 Southwest Burrito Wraps

A whole loaf of bread turned into french toast

36 Pumpkin, Carrot and White Chocolate Chip Muffins with Cream Cheese Frosting and 24 Zucchini, Walnut and Chocolate Chip Muffins. Then I made my sweet sausage, tri colored pepper, mozzarella and fresh basil pizza...

Needless to say with kids, cooking and cleaning I was beat and actually went to bed early. I am hoping to get some freezer dinners put together this week or next weekend since Tristan is starting football this week and then Carmine will be starting soccer.

Back to school cupcakes

To cheer the boys up about having to leave their dad and come back to the US to go to school I decided to make them a fun little treat that they can share with their class mates. A little while back there was an offer to get the Disney Family Fun Magazine for free. My first issue came and they had these adorable little cupcakes. So in between trying to get things together here and having a whole freezer cooking day yesterday I have been starting to make parts of the cupcakes. I will bake the cupcakes Sunday or Monday and they can bring them to school Tuesday when they go back.

So far I have done the little "blackboards" with each of the students names on them and made the little "apples" they are starting to come together and I can't wait to see the end result!

We're back!

I had intended on blogging while we were spending time with my husband in Mexico for the last part of summer but it seemed as though everywhere we went you had to pay for internet access and even then they only allowed you to use it on one device. Since my husband has to have the internet for his job he was the one who used it. I am far behind on my posts and still have to post the winner of the dress. I did miss blogging, but since it it had been so long since we had seen my husband it was far more important to have quality family time. Especially since our time there was limited with school starting.

We did a LOT of fun family stuff and daddy and Koby bonded even more. It saddens me that he misses so much of his important milestones. Hopefully someday we will all be able to live a normal happy life again. We are thankful that he has a job and that he does was he had to provide for our family.

We went to Xcaret and it was simply breathtaking! From the parrots to flamingos and all the way to the jelly fish. There was so much to do and see. We even had dinner at a Mayan reinactment show. Vic really wanted to take the boys to see that since it is part of their heritage seeing as how they are direct desendents of Montezuma. We went to the pyramids in Campeche and even climbed to the top of one of them...in almost 120 degree weather it was no easy task! To think the Mayans did that every day is just crazy! We swam with dolphins and even rode on a pirate ship. The boys enjoyed every moment with their dad and can't wait until December when we go back for another few weeks. It was MUCH needed family time!!

Leaving is always the hardest and hurts so much...not to mention taking 3 small children through an airport, let alone an international airport with luggage, strollers car seats and all is no easy task. It breaks my heart to see the boys hurt and have to get back to our day to day life. Perhaps someday we may just give in and move to Mexico so we can see him more often. Who knows...
